You are partially correct when you say that being a translator/interpreter doesn't always guarantee a job, although there is always the possibility you may find a permanent position with a big company or agency. It also depends on what languages you master. Some are more in demand than others.
As a lawyer however, you can pretty much assume (and be right) that you'll always have work. Knowing more than one language will only guarantee more work.
